

Château La Conseillante
2009 Chateau La Conseillante Pomerol 750ml
Ripe black plum and cherry, violet and licorice, with a hint of roasted almond. Tannins feel polished rather than pushy, and the finish glides on.
Merlot and Cabernet Franc on clay and gravel give a plush core with lifted perfume. A short cold soak before fermentation brightens the fruit, and time in new barrels adds supple spice and that almond tone, without heaviness.
It is gorgeous now and will keep improving for years. Serve at cool cellar temperature, decant about an hour and pour gently off the sediment.

- La Conseillante 2009 tasted exceptionally well from the very beginning. Silky tannins and aromas of black fruit, violet, licorice and fresh almond give superb balance and notable length.
- Pairs with
- Roast lamb with rosemary and garlic; duck breast with black cherry sauce; beef tenderloin with mushroom duxelles; truffled potato gratin.
- Serving
- Serve at 16 to 18°C. Decant 45 to 60 minutes and pour gently off the sediment.

- Winemaking
- Pre fermentation cold maceration 3 to 5 days, then in tank for 3 to 4 weeks. Fermented in stainless steel, fully temperature controlled. Aged 18 months in 100 percent new barrels.

- Soils are 60 percent grey clay and 40 percent sandy gravel. Average vine age 35 years.
