Loaded with bright acidity and full of umami without being cloying, this sake is great slightly warmed as well as chilled and is an excellent companion for rich foods like miso-glazed salmon and country paté. Interestingly, the brewer says it can actually last months in the fridge after being opened and she enjoys drinking it after it's been open for about a month.
