2006 Fausto & Augusto Andi Metodo Classico Cuvée n. 5 Brut Nature 750mL
Here is a rare Italian sparkler that earned its calm authority the patient way. Fausto Andi has been profiled in Lavinium for his unconventional take on metodo classico, and this 2006 shows why. Fausto and his son Augusto farm biodynamically in Montù Beccaria in Oltrepò Pavese in Lombardy, and add no sulfites. Work in both vineyard and cellar is guided by restraint and patience. The key is time and transparency: second fermentation in bottle, 100 months resting on the lees, and disgorged with no sugar added, so the fruit and the years do the talking.
A nose of honeysuckle and a hint of yellow apple gives way to a palate of ripe peach and ever-changing layers of almond, brioche, cinnamon-apple, and poached pear. The long rest keeps the aromas seamless and the finish long. A unique and memorable wine.

Andi
In 2006 the farm was accredited as a teaching farm, and in 2007 they built a teaching barrel cellar with large casks to study how wood and lees shape wine.
Today Fausto and Augusto work side by side. They ferment with native yeasts, add no sulfites, bottle without fining or filtration, and harvest by hand, focusing on indigenous grapes and low‑intervention cellar work from their base in Montù Beccaria.
