Strawberry and red plum lead, with orange peel, a light floral note and delicate tea spice. The fruit is juicy and fresh, then a gentle savory edge steadies the sip. Light to medium body with a smooth, mouthwatering feel. The finish lingers on that savory edge.

It starts bright and juicy and gains a gentle savory edge over the meal, landing between a dark rosé and a light red. Jaroslav Osička keeps the old Moravian Ryšák tradition alive by co-fermenting red and white grapes so vivid fruit and quiet spice share the same glass. The result is expressive without being sweet, textured without becoming heavy, and unmistakably Moravia.

Jaroslav Osička

Jaroslav Osička runs a small family winery in Velké Bílovice near the borders of Austria and Slovakia. He farms roughly 3 hectares and has worked organically since the late 1980s, avoiding herbicides and pesticides, using biologically based sprays, and encouraging cover crops. Work is by hand and yields are kept low.

In the cellar he lets the wines ferment on their own without temperature control. Skin contact is common even for whites, and aging is slow, most often in wooden casks for a year or more. Sulfur is used only before bottling, and the wines are usually bottled without filtration.

A longtime teacher of organic viticulture at the wine school in Valtice, Jaroslav now works with his son Luboš. They focus on Burgundy varieties alongside Moravian staples and keep the local Ryšák tradition alive by co-fermenting red and white grapes.
