Earthy yet super-juicy wild strawberry and rhubarb, the bubbles turning creamier as a stony, lightly salted edge comes forward. Bright acidity keeps it brisk without sweetness. The bead is lively and creamy. It ends on wet stone with a hint of salted caramel.
Marek Uhnák brings together Pesecká Leánka with a touch of Frankovka and bottles before fermentation finishes so the bubbles feel soft and the fruit stays lifted. Farming is organic on volcanic tuff in Čajkov, which shows in the stony snap. The result is expressive without being sweet, textured without becoming heavy, and distinct to this volcanic corner of Slovakia.

- Harvested by hand into small 18 to 20 kg crates, Leánka gently destemmed, crushed and macerated on skins 3 to 5 days, free run juice moved to stainless steel tanks to ferment about two weeks with native yeast, fermenting must of shortly macerated Blaufränkisch about 20 percent plus about 2 percent Frankovka 2020 added, cofermented one week, bottled at the end of September 2022 while still fermenting to finish in bottle as a pet nat, four months of prise de mousse, bottles gently shaken by hand to better incorporate the bubbles, unfined, unfiltered, undisgorged, no sulfur added

Pivnica Čajkov
Winemaker Marek Uhnák studied in Modra and at Mendel University in Brno before returning home to build on that legacy. His approach is hands on and minimal in the cellar, relying on native yeast, little to no sulfur and patient work to let the vineyards speak. The range runs from still Leánka to playful ancestral-method sparklers like Red Gull, all shaped by the region’s south-facing sites and resilient, stony soils.
