Dominio de las Abejas
In 2018 Ricardo Michel Mata, a viticulturist with a master's degree from the University of Adelaide, took over day-to-day vineyard management. The estate farms with organic certification through CCOF and follows a minimal intervention approach in the cellar, relying on wild fermentations and bottling without clarification or fining.
Today the wines come from the high, cool Ojos Negros valley, around 2,260 feet, on varied soils from sandy calcareous patches to thick red clays, and are made with native yeast and simple stainless steel aging to keep the focus on place.
