Meinklang
Meinklang is a true polyculture, not just a winery. The family raises cattle, horses, Mangalitsa pigs, sheep and a few chickens, and those cows supply the compost that feeds the vineyards. Alongside vines they grow ancient grains like spelt, farro and einkorn, plus fruit and vegetables, keeping the farm’s fertility largely self‑made.
They farm to certified biodynamic standards, aiming for a closed farm organism with their own seed, feed and compost. That same low‑input mindset carries into the cellar, where spontaneous ferments are the norm and stainless steel is used to keep wines fresh and lively.
