To'ak Chocolate

To'ak grew out of a rainforest conservation project in coastal Ecuador. Co founder Jerry Toth began cultivating cacao and making chocolate by hand in a bamboo house deep in the forest, roasting beans over a wood fire and learning directly from neighbors. The search for ancient Nacional cacao led the team to Piedra de Plata in Manabí, where they built relationships with small farmers and helped revive a celebrated lineage of cacao.

In 2013 Toth joined Carl Schweizer and Dennise Valencia to found To'ak with a clear aim, to elevate dark chocolate to the level of fine wine and aged whisky. Designed, crafted, and packaged in Ecuador, To'ak pays farmers well above local prices, focuses on regenerative cacao, and treats each harvest as a reflection of place and time.
Tasting note
Lemon ants are a surprising ingredient used by native Amazonian communities to flavor many dishes. Endowed with a delicate citronella aroma, this unique recipe of chocolate with ants will delight the most refined and adventurous palates.

Single origin, bean to bar. Beans are roasted, winnowed, ground, and some conched at Ecuatoriana de Chocolates in Quito, then inclusions are added and the chocolate is tempered and molded at To'ak’s own production facility in Quito.
