
2025 Bassi Vineyard Coferment
We're thrilled to bring in this striking coferment from Bassi Vineyard, perched on a sandstone ridge in the SLO Coast AVA — just 1.2 miles from the Pacific Ocean. The vineyard's steep slopes, morning fog, and constant ocean winds create one of California's coolest growing sites, and you can taste it in every sip.
This wine is a coferment: the Pinot Gris (55%) went in as 100% whole cluster, while the Pinot Noir (45%) was destemmed and layered directly on top. Native yeast started the fermentation, then the whole lot was gently pressed in a wooden basket press and aged for eight months in old French oak. Bottled without fining or filtration (just a whisper of sulfur), it's hazy, alive, and electric.
On the palate: Think sea salt, pear skin, blood orange zest, wild strawberry, and a fine-grained, almost sandy mineral texture — that sandstone and ocean air coming through loud and clear.
Pair with: Grilled halibut or salmon with citrus-herb butter • Roast chicken with fennel and lemon • Mushroom and leek tart • Charcuterie (especially pâté or prosciutto) • Or just a cool evening with good company.
