2023 Ontañón 'Kaori' Rioja Viura 750mL
Kaori is Japanese for "fragrance," and this white is built to protect it. The Viura, with a touch of Maturana Blanca and Garnacha Blanca, comes from vineyards above 600 meters in Ausejo and on the slopes of the Sierra de Yerga. It's picked early in the morning, and only the first pressing makes the cut. After a slow, cool fermentation in steel, it spends just three months in American oak on its fine lees. That's enough for a round texture and a finish of white pepper and toast, without losing the lift.

- Early harvest by hand. First press juice only, then natural static settling for two days. Fermented in stainless steel at 57°F for about 19 days with its lees. Rested three to four days to shed gross lees, then aged three months on fine lees in first and second use American oak, then a further four months in new oak barrels before bottling. Blend is 90 percent Viura with small amounts of Maturana Blanca and Garnacha Blanca.
